Market Mobile producer, Bomster Scallops was founded in 1984 and is run by Kristen Ketcham & Russ Boullard, who are the Rhode Island and Massachusetts distributors for the Bomster family.
Bomster Scallops are harvested, hand shucked, and rinsed in sea water to clean the sand off within an hour of being caught. The Scallops are then vacuum packed & FLASH frozen on the boat. Flash freezing does not allow for ice crystals to form or change the texture of the scallop.
Bomster Scallops are DRY. Meaning, they are never rinsed in fresh water, only fresh salt water — and they are not rinsed or soaked in STP (sodium tripolyphosphate). Using this cutting-edge technology, once thawed, Bomster Scallops will remain fresh for up to seven days!
